I had wanted to make this cake for a long time, but I couldn't find our metal 8x8 pan. We made it at 9pm last night, and it was ready to eat by midnight. Bwah hah hah....

Thanks for the picture! I couldn't visualize what an oatmeal snack cake would be like... I kept picturing something that was a cross between a Hostess Snack Cake and a berry crumble. It looks lovely and rustic!

The funny thing is...
...even though the cake itself has 3/4 cup of flour and 1 cup of quick-cooking oats(rehydrated in tepid water), the oatmeal completely disappears into the cake. It tastes like oatmeal, but the oatmeal flakes are nowhere to be found. The cake itself is really soft, but not greasy, because it only has 4 T of butter.
